Things didn’t go quite as planned, as our first flight was canceled, but we did end up making it to Boracay at the end of the day, and then got checked into Discovery Shores Hotel.     I’ve already mentioned this a few times, but my main camera broke when I was in the Philippines, and so I had to use my backup camera. The only problem is, I forgot to bring the battery charger We went to the Canon repair center in Manila and along with taking 3 weeks to fix my main camera, they called all the Canon stores throughout Manila and couldn’t find a charger for my small backup point and shoot camera. The closest airport is Caticlan, and about 2 hours away is another airport called Kalibo. 7:19 Boat ride to Boracay - After taking a van for about 2 hours to get to the pier, we then took a quick boat ride to Boracay island and we headed to Discovery Shores Hotel where we stayed for 2 nights. 10:00 Dinner at Discovery Shores Boracay - Dinner was served on the beach, along with Anton and his family, and everything was pretty good. Disclosure: We were invited to stay at Discovery Shores Boracay, so we didn’t pay for our stay. We grabbed an Uber X, which is actually about the same price and more convenient than a taxi - at least from what I found. 7:09 Hanging out for Sunset - For the remaining part of the day, we just stayed in our room at Sofitel, and I really worked hard to complete my presentation. We were already scheduled to stay at Discovery Primea Hotel, which was arranged by my friend Anton. Flight went well, we got our baggage, and then once we arrived in Manila,someone from the hotel was there to greet us and picked us up. 1:26 Discovery Primea Hotel - Discovery Primea is a hotel in the Makati area, and it’s a very nice and new hotel. They gave us a huge room. 3:53 Breakfast - We woke up the next morning, hungry and ready for breakfast. It wasn’t a buffet breakfast, but they had a salad bar and a menu that you could order from. I went with the beef wagyu tapa, a bed of rice topped with eggs and steak. 6:54 Restaurant Tapenade - After getting some work done, we went to meet the management of the hotel for lunch at Restaurant Tapenade, the signature restaurant at Discovery Primea, that serves Mediterranean food. The food was all excellent, but I especially enjoyed the stone baked feta cheese dish, and the angus rib eye steak. It was amazing. But in the afternoon we just met up with a class he was teaching. 12:50 Abe Restaurant - After the class we went to Abe Restaurant with Anton, known as one of the top indoor Filipino restaurants in Manila. The food, all of which Anton ordered, was all delicious. The lamb adobo was excellent, and I especially enjoyed the sinigang made with ripe guava and bangus fish. Food was really good, highly recommended. Disclosure: We were invited to stay at Discovery Primea, so we didn’t pay for our stay. The concept of hiya or shame requires one to behave in a manner that will not shame the person or the family. Handshake is common when meeting someone. If elders are present, acknowledge them first. Address people formally indicating their profession or using their last names. In discussions Filipinos tend to be non-confrontational. People will not directly say no. In making appointments, Filipinos tend to be more forgiving. If you arrive 15 to 20 minutes late, unless you are attending a business function. If you ever receive a gift, open it afterwards, not in front of the person who gave it to you. When it comes to tipping, 10 percent of the bill is typical in most situations, unless it is already included. In that case you can give a small change. Since I had already heard about it from others, many of whom said it was the best and grandest buffet in the Philippines, and maybe in Asia, I was pretty excited to have the chance to try it out. We arrived right as the sunday lunch buffet started, right at 12 noon, and we first met the manager who showed us around the buffet, and explained the philosophy of the buffet. At Spiral Buffet in Manila they have 21 different food ateliers, which is French means artisan workstations - so at the buffet they mean different types of cuisine and stalls. So there are basically 21 different types of cuisine to choose from, French, Indian, Filipino, Thai, and a full cheese room, and fresh cold Japanese section as well. As soon as we sat down, we were poured a glass of champagne to begin with. There are two different prices for the sunday brunch buffet - you can either go with unlimited alcoholic beverages (champagne and wine) or you can go without alcohol. If you’re interested in drinking, the former option is a great option. I had no clue where to start eating, so I just went with the food that was the closest to our table - the cold Japanese atelier - including a full tuna sitting and waiting to be sliced by the piece. After my plate of sushi and sashimi and caviar, I then had a plate of Filipino food including crocodile adobo and the infamous balut - a fertilized boiled egg - all of which were pretty good. I then had a plate of Indian food, French food, and some Japanese hot food too. What I really liked about Spiral Buffet at Sofitel Manila is that even though it was so incredibly grand and so extensive, the food was cooked in small batches, so it wouldn’t sit too long before being finished off. This way, the food remained fresh, and hot, and though it was a buffet, the quality was truly top notch. I haven’t been to too many hotel buffets in my life, but this was easily one of the best buffets I’ve ever seen or eaten at. When we were in Manila, Anton said he had a special dinner surprise for use. I honestly had no idea what to expect, and we had just gotten off the plane back to Manila from Boracay. We arrived to someone’s home, and still I had no idea what were were doing or what we were going to eat. Then, out from the kitchen emerged a golden suckiling pig, known as a lechon. We were at the home of one of the most well known and considered one of the best places to eat lechon in Manila, Pepita’s Kitchen with the Lechon Diva! Lechon de Leche is the Filipino version of a roast suckling pig, and at Pepita’s Kitchen, she experiments with different types of lechon, and one of her signature versions is lechon stuffed with truffle rice. As soon as she sliced the lechon, you could just hear the incredible crunch of the skin, and the steamy truffle laced rice had an amazing aroma. We started with the skin, which was absurdly crispy - it was incredibly good. I don’t think I’ve ever tasted anything so crispy in my entire life. We then had dinner, including some of the meat of the lechon, plus the skin. It was the most delicious, lechon or version of roast pig I may have ever had in my life. Pepita’s Kitchen in Manila is not a restaurant, but it’s a home where you can reserve a lechon and invite your friends and family to eat there, or to take away. Eating lechon in the Philippines is really a special meal. It’s eaten on festive occasions, and at special family times. It’s a meal that’s really a part of the culture in the Philippines. I’ve already mentioned this a few times, but my main camera broke when I was in the Philippines, and so I had to use my backup camera. The only problem is, I forgot to bring the battery charger We went to the Canon repair center in Manila and along with taking 3 weeks to fix my main camera, they called all the Canon stores throughout Manila and couldn’t find a charger for my small backup point and shoot camera. So I was kind of out of luck. So having my point and shoot camera on its last leg, with just a bit of battery left, Ying and I decided to jump in a taxi and go to Pat Pat’s Kansi, a restaurant I had seen on Foursquare, and thought would make a good last meal in Manila (https://foursquare.com/v/patpats-kansi/4bb026acf964a520d5393ce3). I ordered the kansi, a big bowl of beef soup with a giant club sized bone in the middle, full of bone marrow. We also ordered some grilled squid, a grilled boneless bangus (milkfish), and fresh lumpia. All the food at Pat Pat's Kansi was excellent - I especially enjoyed the kansi and the boneless bangus, but the squid was also good. Our waitress showed me how to make a simple Filipino sauce of soy sauce, calamansi, and chilies to eat along with everything.
